Chicken & Sweet Potato Soup

  • Olive Oli - 2 tbsp
  • Unsalted Butter - 2 tbsp
  • Red Onions, diced - 1 cup(s)
  • Celery ribs, diced - 1/2 cup(s)
  • Fresh Garlic, minced - 1 tbsp
  • Jalapeno peppers, roasted and chopped - 1-2 tbsp
  • Fresh Basil - 1 tsp
  • Ground Cumin - 1 tsp
  • Kosher Salt - 2 tsp
  • Fresh Ground Bleck Pepper - 1 tsp
  • Cayenne Pepper - 1/4 tsp
  • 2 medium Sweet Potatoes, peeled and chopped - 1 lbs
  • Chicken Broth - 8 cup(s)
  • Cooked and Sherred Chicken (boneless/skinless breast) - 3 cup(s)
  • Fresh Cilantro, chopped - 1/4 cup(s)
  • Lime Wedges - 1/4 lbs
  • Crispr Tortilla Strips - 1/2 lbs
  • Fresh Avocado Slices - 1/4 lbs

In a large, heavy stock pot, add the butter and oil and cook over medium-high heat, stirring constantly until the butter melts. Add the RED ONIONS and cook for 10 minutes, stirring occasionally, until they are just tender and slightly caramelized. Add the CELERY, and cook for an additional 10 minutes, stirring frequently. Add the GARLIC and cook for an additional 30 seconds, stirring constantly. Note: DO NOT LET THE GARLIC BROWN.
Add the JALAPENO PEPPERS, BASIL, GROUND CUMIN, SALT, PEPPER and CAYENNE, and cook for approximately 2 minutes, stirring constantly. Add the SWEET POTATOES, CHICKEN BROTH and bring this to a slow boil.
Reduce the heat to low and simmer for 45 minutes, or until the potatoes are tender. Stir in the CHICKEN and cook for another 5 to 7 minutes.
Note: If needed skim any foam that develops on the surface of the soup and discard.
Divide the soup into individual serving bowls, top with equal amounts of the FRESH CILANTRO, and place a small plate of CRISPY TORTILLA STRIPS, LIME WEDGES and AVOCADO STRIPS with the soup and serve at once.

This soup is a great summer time soup. It is very refreshing and fills you up completely. I have always made this soup for friends and family during Cinco De Mayo as well as on the 4th of July. The inspiration for this soup actually came out of combining 2 of my favorite soups, Sweet Potato Soup and Chicken Tortilla soup. The 2 were put together one day and the rest is as they say history. Everyone and anyone who tries this recipe is an instant fan of it. And the great thing with soup is, if you don't have chicken breasts available, the dark meat of the chicken works just as well..
