Spicy Tomato Basil

INGREDIENTS

  • Olive oil - 3 tbsp
  • Garlic - 3 tbsp
  • Crushed red pepper flakes - 1 tsp
  • Diced tomatoes - 4 cup(s)
  • Tomato paste - 4 oz(s)
  • Yellow onion - 2 cup(s)
  • Low sodium vegetable broth - 4 cup(s)
  • Fresh basil - 3 tbsp
  • Kosher salt - 1 tsp
  • Freahly ground black pepper - 1 tsp
  • Sour cream - 6 tbsp

INSTRUCTIONS
1 In stock pot add olive oil, minced garlic and red pepper flakes
and cook over medium heat for around 5 minutes.
2 Add diced tomatoes, tomato paste, sliced onions and broth - cook for 20 minutes.
3 Add minced basil, salt and pepper - cook for 5 minutes..
4 cool slightly and puree in blender
5 Ladle into bowls and garnish with sour cream

RECIPE STORY
It beats canned tomato soup any day, and has a nice kick
